15 bean and pureed vegetable soup

a simple, hardy vegetarian meal
This is a great light and healthy recipe that is very filling as well. This soup will take a little time to make but most of it is just letting it cook and isn’t involved at all. Give this soup a try on a nice cold day to fill and warm you up

Ingredients
- 1 package 15 bean soup dried beans
- 2 cans vegetable or chicken stock
- 2 cans tomato sauce
- 3 cloves garlic minced
- 1 package carrots (baby or frozen)
- 3 bell peppers sliced and seeded
- 1 yellow onion sliced
- 2 stalks celery sliced
- 2 table spoons olive oil
- hot sauce
- salt
- pepper
- dried oregano
- dried rosemary
- dried parsley
Instructions
- Place the beans in a large bowl with two quarts of water and let soak over night.
- In the morning combine the vegetables in a stock pot sprayed with no stick and the garlic let cook till vegetables are soft.
- Add 1 tablespoon each of pepper and salt and pour in the chicken or vegetable stock.
- Bring to a boil for 15 minutes then remove the vegetables and set them aside
- Drain, rinse and add the beans to the stock pot with two quarts of water and bring back to a boil.
- Add in 1 teaspoon each of oregano, parsley and rosemary.
- Move the vegetables to a food processor with the olive oil and two splashes of hot sauce. (you can use a blender in a pinch) puree the vegetables till smooth.
- Let the beans boil for an hour and a half adding water when needed you want the water levels to reduce between 30 to 40% but not below that.
- Reduce to a simmer and add the pureed vegetables back into the soup and let simmer for 10 minutes.
- Serve and enjoy
