This is a great light and healthy recipe that is very filling as well. This soup will take a little time to make but most of it is just letting it cook and isn’t involved at all. Give this soup a try on a nice cold day to fill and warm you up

Ingredients

  • 1 package 15 bean soup dried beans
  • 2 cans vegetable or chicken stock
  • 2 cans tomato sauce
  • 3 cloves garlic minced
  • 1 package carrots (baby or frozen)
  • 3 bell peppers sliced and seeded
  • 1 yellow onion sliced
  • 2 stalks celery sliced
  • 2 table spoons olive oil
  • hot sauce
  • salt
  • pepper
  • dried oregano
  • dried rosemary
  • dried parsley

    Instructions

    1. Place the beans in a large bowl with two quarts of water and let soak over night.
    2. In the morning combine the vegetables in a stock pot sprayed with no stick and the garlic let cook till vegetables are soft.
    3. Add 1 tablespoon each of pepper and salt and pour in the chicken or vegetable stock.
    4. Bring to a boil for 15 minutes then remove the vegetables and set them aside
    5. Drain, rinse and add the beans to the stock pot with two quarts of water and bring back to a boil.
    6. Add in 1 teaspoon each of oregano, parsley and rosemary.
    7. Move the vegetables to a food processor with the olive oil and two splashes of hot sauce. (you can use a blender in a pinch) puree the vegetables till smooth.
    8. Let the beans boil for an hour and a half adding water when needed you want the water levels to reduce between 30 to 40% but not below that.
    9. Reduce to a simmer and add the pureed vegetables back into the soup and let simmer for 10 minutes.
    10. Serve and enjoy
